Tasting notes
Gypsophila, cloves, tree bark, blackberries and dried fruits such as raisins and prunes. On the palate, sweet aromas of shade-dried grapes and cloves, with good tannins. A lingering finish with a hint of maturity such as tobacco.

Winemaking
From Domaine Hide in Yamanashi, one of Japan's leading wine-growing regions, which delivers high-quality wine every vintage, this time a wine made using the Ripasso method, a traditional method used to make red wine in the Veneto region of Italy, has arrived. The Ripasso method is a method of vinification in which black grape pomace from the production of Amarone (a traditional method of fermentation of shade-dried grapes) is poured into another red wine for further fermentation. It is characterised by a more concentrated fruit flavour, softer tannins and a more floral aroma than the original red wine.

Domaine Hide used Cabernet Sauvignon and Muscat Bailey A, a variety indigenous to Japan. The Cabernet Sauvignon underwent a long maceration of 3-6 months and long barrel ageing of up to 33 months. The wine was then fermented again with the addition of Amarone pomace made from shade-dried Muscat Bailey A. The Cabernet Sauvignon was harvested in October 2019 and October 2020 from Akeno, Yamanashi, while the Muscat Bailey A was harvested in August 2022 from Minami-Alps, Yamanashi.

The label is from the ‘Hirameki (inspiration)’ series by Hyogo-born artist Mino Yamamoto. The artist actually tasted Ripasso NV and was inspired to draw the label design especially for this wine.
