Tasting notes
Aromas of watermelon, strawberry, pear, and papaya. Though light in body, it offers a vibrant fruitiness and a slight fizzy touch, making it exceptionally smooth to drink. As the wine is sensitive to vibration, let it stand upright and rest for about a month before opening. It’s best enjoyed slightly chilled. To fully appreciate its flavor, we recommend finishing the bottle on the same day it’s opened.

Food pairing
Roast beef, Camembert cheese, Caprese salad, prosciutto and pear pinchos, smoked salmon and cream cheese canapés, grilled chicken with yuzu pepper, roast duck breast with berry sauce, pork sauté with strawberry balsamic sauce, seared bonito tataki with grated daikon and ponzu, inari sushi, chirashi sushi, fruit-based salads, and game meat.

Winemaking
The year 2024 was good for Kyoho grapes intended for wine production, but a tough year for table grapes. The slopes of vineyards, which usually produce high-quality table grapes, suffered from water stress due to the dry summer, causing the grapes to become small. As a result, many of the grapes were used for wine production. They used the seeded Kyoho and the seedless Kyoho both from Nara, along with a small amount of other table grape varieties. After destemming and crushing, they proceeded with the classic red wine fermentation.

Born in 1989, Kazuto was the youngest person in Japan to launch the winery in 2022, and is truly representative of the next generation of vignerons. The winery is also the first winery in Nara. In Nara, characterised by its gently sloping land with many rice fields, he searched for soil suitable for viticulture and is currently growing 20 varieties on a one-hectare vineyard. He is working hard to pursue the terroir of his home town, Nara. He is a young vigneron who is attracting attention in Japan.
